The Wines

Chianti Colli Fiorentini DOCG and Toscana IGT, made exclusively from organic grapes grown in our vineyards. Alongside the wines, pasta and flour from Senatore Cappelli wheat grown in the estate's fields.

Harvest

From vineyard to cellar

Everything begins
on the estate.

The vineyards were planted on the best-suited land of the estate, facing south and south-west. They are high-density vineyards of about five thousand vines per hectare: a choice that puts quality before quantity.

At harvest the picked grapes go to the estate's vat room, where fermentation and all the work on the new wine take place.

Only then does the wine move to the estate's ancient cellar: cool and dark, in oak casks, it has time to mature.

The appellation

Chianti
Colli Fiorentini

The Colli Fiorentini sub-zone covers the hill towns around Florence, from Scandicci to Impruneta, from Fiesole to Bagno a Ripoli: land with a long tradition of graceful, drinkable wines.

Its rules are stricter than those of Chianti DOCG: yields are capped at 56 hectolitres per hectare, and the wine may not be released before the September following the harvest. Less wine and more time to age it.
